1 Tbsp olive oil
1 onion, sliced 3 small potatoes, sliced
3 carrots, sliced
1/2 cabbage, shredded
salt and pepper to taste
- Add the potatoes and carrot slices to a small pot of boiling water and cook until just tender. Drain and set aside.
- Saute the onions in the oil over medium heat, stirring, until beginning to soften. Add cabbage and stir until cabbage is soft. Add potatoes and carrots. Salt and pepper to taste.
- Place vegetables on serving platter.
- Heat up corned beef per package instructions. Carefully pour juices into a measuring cup.
- Slice corned beef across grain. Add to platter and pour hot juices over all. Serve.
