My mom cannot stop talking about how delicious the Eggplant Parmigiana has been! She normally just grabs one of the Magic Kitchen meals in her freezer when she does not know what to prepare from what she has in her fridge (she has CKD Stage 4)and its a pleasant surprise when she heats it up and sees its the Eggplant.
